1. Preheat oven to 400 °F. Brush 2 baking trays with oil to lightly grease.
  2. Place the pumpkin, garlic and oil in a bowl. Season with salt and pepper, and gently toss until combined. Place pumpkin on a prepared tray.
  3. Place red bell peppers on remaining tray. Bake in preheated oven for 30 minutes or until pumpkin is golden brown and the red bell peppers is tender. Set aside for 5 minutes to cool slightly.
  4. Cook the pasta as per packet instructions, then drain well.
  5. Thinly slice the roasted bell peppers. Add to the pasta, along with the pumpkin, feta, olives and basil. Gently toss until just combined.
  6. Season with salt and pepper.
  7. Serve with a mixed leaf salad.
