Method

  1. In a heavy pan, gently fry garlic and bay leaves in oil for 2 minutes. Add chopped tomatoes and juice, sugar, salt, pepper and stir. Cook on medium heat for 15-20 minutes or until thickened. Remove garlic and bay leaves.
  2. Meanwhile, cook the spaghetti as per packet instructions and drain.
  3. Toss hot, drained pasta with half of the tomato sauce. Pour rest of sauce on top, sprinkle with the mozzarella and serve.
