Gluten Free Penne Salad with Tuna and Red Onion

Ingredients
8.8 oz gluten free penne
1 tablespoon red wine vinegar
2 tablespoons olive oil
6 oz tuna, drained
3 medium, ripe tomatoes, diced
½ medium red onion, finely sliced
2 tablespoons pine nuts (optional)
Salt and cracked black pepper to taste
1 cup fresh basil leaves to garnish
Method
Cook pasta according to packet directions. Drain, rinse under cold water and drain again.
Place in a bowl with all other ingredients. Toss well to coat all the pasta.
Add salt & pepper to taste
Garnish with basil leaves and serve.
