Method

  1. In a large frying pan heat the oil and gently sauté the garlic with the diced chillies. Continue until the garlic is barely golden. Do not let it brown or it will taste bitter.
  2. Stir in the parsley and season with salt. Remove from the heat until the pasta is ready.
  3. Cook 2 packets of pasta as per packet instructions, removing just before al dente.
  4. Add it to the pan with the oil and garlic, and cook together for 3-4 minutes, stirring well to coat the spaghetti with the sauce.
  5. Serve immediately in a warmed serving bowl, with parmesan (optional)
