Rotini Roma

Ingredients

San Remo Gluten Free Rotini 8.8oz

1 tablespoon olive oil
3 Canadian style bacon rashers, trimmed and cut into thin strips
1 large red bell pepper, seeds removed, finely chopped
5 large ripe Roma tomatoes, coarsely chopped
1 cup vegetable stock
2 tablespoons tomato paste
2 tablespoons light cream
Salt and cracked black pepper to taste
1 cup chopped parsley

Method

  1. Cook pasta according to packet directions. Drain.
  2. Heat oil in large saucepan, then add bacon and bell pepper and stir fry over high heat for 1-2 minutes.
  3. Stir in tomatoes, stock and paste. Cover, reduce heat, then cook for 4-5 minutes until tomatoes soften.
  4. Stir cream into sauce, season with salt and pepper to taste and mix well.
  5. Gently toss drained pasta and parsley through the sauce.
