Rotini with Ricotta, Pesto and Sun-Dried Tomato

San Remo No.110 Rotini 1 lb

13 oz ricotta cheese
3 tbsp freshly grated parmesan cheese
3 tbsp olive oil
3 tbsp good-quality pesto
16 to 18 sundried tomatoes with oil drained and reserved, cut into thin strips
Salt and freshly ground black pepper to taste

  1. Cook the pasta as per packet instructions
  2. Meanwhile, mix the ricotta with the parmesan.
  3. Drain the pasta and return it to the pot. Add the cheese mixture and thoroughly blend through.
  4. Stir in the olive oil, pesto and half the sun-dried tomatoes and their oil and mix together. Add salt and pepper to taste.
  5. Serve sprinkled with the remaining sun-dried tomatoes.
