Elbows with Sausage

San Remo No.102 Elbows 1 lb

14 oz spicy sausages
2 tbsp olive oil
1 small onion, chopped
2 cloves garlic, chopped
1 large red bell pepper, cut into strips
14 oz canned tomatoes
1 cup vegetable stock
Salt to taste
Freshly grated parmesan cheese, to serve

  1. Cook pasta according to packet directions and drain.
  2. Grill sausages until brown then cut diagonally.
  3. Heat oil in saucepan, add onion and garlic and cook until soft.
  4. Add capsicum and cook for 6 minutes.
  5. Add tomatoes, break up with wooden spoon and cook for a further 10 minutes.
  6. Add stock and salt to taste.
  7. Add sausages to sauce and cook for a further 10 minutes.
  8. Toss with drained pasta and serve with grated parmesan.
